Capmundo’s expertise: track down, select, reveal and create The roasting process involves roasting the green coffee bean (raw material) to release its aromas, triggered by a phenomenon called the « Maillard reaction ». When heated, the sugars and amino acids contained in the bean, which develop when the bean ripens, are converted into aromatic molecules. To create our exclusive recipes, we have tracked down the finest green coffees in the heart of the most prestigious regions. Selected on the basis of their remarkable organoleptic potential, these unique varieties are roasted separately, using a traditional artisan slow roasting technique to reveal their full character and intensify the aromatic complexity of each of our recipes. Our chosen roasting method reflects our « artisan tradition » philosophy.

Separate roasting Each of our exclusive recipes has been created by blending coffee beans from different regions, of different varieties or resulting from different processes. The most commonly used roasting process for blends involves roasting a combination of beans, in other words, mixing the green coffee beans before roasting. However, due to its individual features, each variety consists of beans of a specific size, density and hygrometry. We have therefore decided to use a « separate » roasting method in favour of the « classic » roasting process. We roast each variety of green coffee separately, to obtain the ideal roasting profile allowing optimal aromatic development.

Slow roasting From a production point of view, roasting the beans quickly, at higher temperatures and pressures, is more advantageous because, as well as the time saving, far less weight is lost during roasting. Rather than saving time, or money, our objective in the roasting phase is to enhance the sensorial profile of each of our coffee varieties. To do this, we use a slow artisan roasting process, applying gentle heat to allow the coffee to fully develop. Similar to the importance of good cooking in haute cuisine, this artisan roasting method is directly responsible for the quality and aromatic complexity in each cup of our remarkable recipes!
